Christmas Gingerbread Men Receipe - So Easy!

Another Christmas blog?

I love gingerbread, once it hits 
December nearly every week i make 
gingerbread, I know its still only the
 second last day of November but i had
 to make some!

I got these cute festive cutters in ikea for about €4 bargain! Icing is also optional, i like to dip mine in melted milk chocolate! :) Yummy!

These gingerbread men can be made with golden syrup or treacle. If ya make it with treacle it becomes very dark and there is a really strong flavour, Do not use this gingerbread to make a gingerbread house. It will fall apart and become extremely messy :P 



The icing receipe uses the raw egg white. But water can be used instead. 





Makes about 18 medium gingerbread men 




I normally use a 20ml tablespoon and 250ml measuring cup for all this recipe.



What you will need:

375g (2 1/2 cups) plain flour
1 teaspoon bicarbonate of soda (baking soda)


3 teaspoons ground ginger

140g butter, softened (if its unsalted butter, add 1/4 teaspoon fine table salt with the butter to make it salty!)
130g (1/2 cup, packed) brown sugar
125ml (1/2 cup) golden syrup or treacle
1 large egg, separated into yolk and white 
2 teaspoons mixed spice or ground spice (mixture of cinnamon, allspice and nutmeg)


DO NOT MELT THE BUTTER, IT DOES NOT HELP!!!! 


Using an electric mixer or electric hand-held beaters, i used a whisk! Beat butter and brown sugar together in a large bowl. Mix and mix and mix until its smooth and creamy!




Add golden syrup/treacle and egg yolk  to the butter mixture.


Beat for about 30 seconds until all the ingredients are mixed together well!



Stir or sift flour, bicarbonate of soda, mixed spice and ginger together in a bowl.




Using a spoon, or mixer add the flour slowly to the wet mixture. I used a wooden spoon/spactula and did it by hand!




Preheat oven to 180 degrees Celsius (160 in a fan oven!).



Line a large baking tray with baking paper.



Using your hands, bring the dough together into a ball, make sure to kneed it all together to get a big ball!


Cut the dough in half,  put one half in between two sheets of grease proof paper, then roll out the mixture flat. Do this with the second half aswell. Make sure its flat, and pop into freezer for 15 mins, or 30 mins in fridge, this makes the dough nice and firm and extra easy to work with! Shorter cooking time too :P



Once dough is cold and nicely firm, take it out of the fridge or freezer, move it onto kitchen bench or leave on chopping board, and remove top sheet of baking paper. Working quickly, use a gingerbread man cutter or any shaped cutter to cut shapes from the dough.



Transfer dough shapes to the lined baking tray, placing them about 2cm apart. This way they don't stick together :)  




Fill the tray and place in the heated oven.



I usually bake one tray at a time. But if i want to bake more than one tray at a time, you have to add more baking time :) Or just swap the trays around!


You can personalise the gingerbread men or women, by adding hair! I just popped a ball of gingerbread mix into a garlic press an then place them on the gingerbread women! 


Gingerbread and milk! Nom nom nom!


I bake the biscuits for 13 minutes. The longer the baking time, means the crispier they will be. I like them nice and crunchy. Make sure to watch that they do not over cook! The gingerbread gets firmer as it cools on a wire tray! 

I use the excess gingerbread mix to make even more shapes :) Leave the gingerbread on the tray for 5 mins before moving to wire tray to let them set!





Icing
186g (1 1/3 cups) pure icing sugar, sifted
1 large egg white or 20-30ml (1 to 1 1/2 tablespoons) water
Food colouring, is optional


Add all ingredients into one bowl and mix. Then pop into a small plastic zip bag and cut off one corner and use as a piping nossle. Make sure you make the hole small to control how to put the icing on :) 

I just skip this step and use cooking chocolate and dip the gingerbread into the melted chocolate! HEAVEN!

The 14 questions of Christmas!


Hey hey guys, so here's a little tag that's all over 

YouTube, so i decided to do it on my blog :)

 You'll get to know me more and what an Irish Christmas
 
is all about :) 


THE QUESTIONS!
1. Do you start your Christmas shopping early or wait until the last minute?

I wish i could say that i'm organised, planned and on top of everything, Sadly i'm the sort that come December i panic. Every year i'm like oh next year ill buy all my presents in the sale and be organised and then boom, forget and the panic sets in! In everything else i am so organised, sadly not Christmas presents! 

2. If you could be in any Christmas movie what would it be?

Miracle on 34th street! I am obsessed with that movie and watch it religiously every single year! I used to watch it every single year without fail. 

3. Which do you like better: Christmas Eve or Christmas Day?

I love Christmas eve because i get to spend the whole night with my family, but i love Christmas day way more. I get to see everyone i want to see and have a huge dinner! In the morning we open all our presents and then spend the day with family and i love it so much!

4. When does your family put up your Christmas tree and who decorates it? 

Anytime after the 8th of December  In Ireland, that's the usual! Its normally my twin and I. We put up two trees, one artificial and one real tree :) It takes hours and i love doing it. Christmas music, hot chocolate and its usually snowing :) 

5. White lights or colored lights?

I hate coloured lights! White lights the whole way, i love a light up tree! 

6. Are you guilty of peeking at your presents or do you like the surprise?

when i was younger i used to ruin Christmas and always peek at my presents now i love surprises! I always wait and see what i get cause it makes Christmas day even more special :) 

7. Would you rather live in a gingerbread house or in Santa's Workshop?

Gingerbread! Cause i could eat my way around, i am OBSESSED with gingerbread! Seriously my favorite biscuit in the whole world!

8. Tell us your Christmas Eve traditions!

Usually we have a family meal out with just the 5 of us, then go home and watch Christmas movies together, have a huge fire on and eat loads of junk :) 

9. If you could be under the mistletoe with anyone who would it be?

JUSTIN BIEBER! :P haha no, Ashton Kutcher, i am obsessed with him since that 70's show!

10. What tops your tree?
A gorgeous Tinkerbell tree topper or an angel! We never really put stars on the tree, i just hate them s much i don't even know why! :P 

11. Have you ever gone Christmas caroling?

No god no, i've been in tons of Christmas concerts and Christmas choirs, i just think caroling would be so embarrassing!

12. Do you countdown to Christmas? If so, how many days are left?

Yes yes i do! There's exsactly a month today :) I can't wait! 

13. What are some foods and treats you can count on having every holiday season?

Gingerbread, hot chocolate, tea, chocolate, after eight mint chocolate, a huge tin or roses! 

14. How has Christmas kept its magic for you as you've grown older?

The magic was still there, even though we grew up its still celebrated and we still get tons of presents from our parents! :)

Boohoo clothing haul - @Iamkatedillon93

Its the best time of year! Christmas :)


Im obsessed with Christmas.. the food... the smells.. the clothing..

So recently i've done a bit of shopping to keep myself nice and warm this winter.
I placed an order on Boohoo.Com and i could not have been happier! I planned on getting one or two pieces i ended up with a few more!

The HUGE package
I was so impressed by the value and the quality of the clothing, Sometimes i hate online shopping as it is very hard to tell sizing, length, shape etc! Boohoo has a great catwalk show and it shows all the pieces on real life models!


















Two quirky items i got from Boohoo are these mustache design tank tops.
The first is grey and has a large mustache saying oui! Its got drop arm holes and its really quite cute! Was only €12!!
This would be gorgeous paired with anything, i can not wait to wear this paired with wine leggings and a cute blazer!

The next is another mustache tank. This ones much longer and has hundreds of I love mustache badges. It was on sale for €8 and seeming its Movember i taught why not!! The back is an almost sheer fabric, layered correctly this could work for all seasons! I love love love this!

I am obsessed with blazers. Anyone who knows me knows that so i got this dogtooth black and white blazer from Boohoo. I think it has a vintage style and will be great dressed up or down. It was only €22 and i love it. I was blown away with the quality of this, i was expecting a thin knit blazer but this blazer has an almost tweed like feel. The design is gorgeous and the shape would flatter any figure! This is my favorite piece i have ever bought from Boohoo! And of coarse i bought the oui top underneath cause of the picture  ;)

The next is a cute black jumper from Boohoo with a gorgeous white lace detailing. It was only €22. I think this would be perfect with leggings are jeans and great for layering this Christmas :) On the website this looks like a heavy knit jumper in my opinion. But its actually very thin, it'd be great to layer with hats, gloves and scarves and the heart detail is to die for! One problem with this, its hand wash only, but soooo worth it!

It comes in tons of colours and i will be buying all of them!

Another piece from Boohoo is a cream wide knit jumper with a love heart detailing in the same colour. Its 3/4 length sleeve is very flattering and super cute! This is actually very short in person and hits just above the waist, the heart detail is gorgeous and didn't quite pick up on camera. Sadly they only have it left in black but for 15 euro its a total bargain!

My next thin to buy! I am so angry i didn't wait one more day and i could have bought this gorgeous jumper! It came out the day after i had placed my order! Of coarse its the same pattern as the tank top but hey, a girl can't have too many mustache things! I love this and will be buying it asap!

I had a small problem with the Alex heart jumper as it was pulling at the neck line. I tweeted boohoo and straight away customer care got in touch! Overall i genuinely love this website, i think it has grown so well and the staff are obviously very caring towards their customers!
